The answer was to design for discovery, not performance. At temper., there is no wine list theatre. Instead, there’s a custom-built cellar you can walk through, a team that listens before they recommend, and a cocktail programme built with the same rigour and curiosity as the wine selection. The room itself is designed to slow you down — low lighting, considered acoustics, materials that age well.

temper. is a place for people who love wine and for people who are just starting to. The only prerequisite is curiosity.
